In ancient times, when refrigeration systems were practically absent, cooking fruit and adding natural preservatives such as honey and sugar were a good preservation solution and, moreover, a real delicacy was produced, so much so that it was considered royal food. A legend tells that Queen Catherine of Aragon who married Henry VIII, King of England, was able to mitigate her great nostalgia for her homeland only thanks to the sweet creation of the orange marmalade she received from Spain. It is also said of Caterina de Medici wife of King Henry IV of France who, in order to recover from an illness, had precious oranges preserved in compote from Sicily sent as tonic with the indication in Italian “per maria ill” which the French understood as name of the food and abbreviated to “marmalade”.
