Italy and food have always been inseparable, and that between Italians and pasta is a long-lasting relationship that has been going on for centuries and spans all regions. In fact, pasta is a dish that represents all of Italy, with many variations from north to south, becoming an icon of good food around the world.
The mixture of water and flour baked in the oven or on the grill was already widely known in Etruria and Magna Graecia (present-day central and southern Italy) during the Roman period, but it is from the Middle Ages that it spread throughout the peninsula thanks to the introduction of two important changes: boiling as a new method of cooking and drying as a method of preservation. Later, the invention of new tools such as the “gramola” and “torchio” and mechanisation would definitively consecrate pasta as an integral part not only of the cuisine but also of Italian life.
